I’ve been really slacking on the menu planning lately. I was having a hard time trying to figure out something different to have every day. The Hubs ™ suggested that I make a rotation of all of our favorite foods. I’d resisted the idea of a rotation for awhile but I (finally) listened to him and it has been VERY helpful!
We rotate cuisines: Monday is Japanese; Tuesday is Chinese or Korean; Wednesday is Vietnamese; Thursday is Filipino or Thai; Friday is Pasta; Saturday is Pizza/Eat Out; Sunday is Free for All/Leftovers.
On the menu at our house for the next week…
Breakfast and Lunch
These days, breakfast is whatever The Little Empress will eat, usually a piece of fruit or granola bar with some milk. After she gets dropped off at preschool, I snarf down a bowl of cereal and coffee while working on whatever’s on my writing docket. The Hubs ™ keeps cereal and fruit at work.
Lunch for The Hubs ™ is generally leftovers, packed the night before. I try to keep it simple (and cheap) by eating vegetarian — or just eating another bowl of cereal for lunch. (Ugh.)

It has been awhile since I’ve jumped on Menu Plan Monday but I thought I’d go ahead and give it a go again. I’ve been a slacker in the planning department which means that our budget has been taking a hit. Feh. At least by participating in MPM, I have a fighting chance of staying on budget!
I decided to take it a step further and actually — gasp! — looked at the circulars to see what was on sale at the local supermarket. AND I clipped coupons which I usually never do. Let’s see if this pays off.
Anywhere, here’s what we’re eating this week:
Breakfasts: Cereal or English Muffins
Lunch: Quesadillas, tuna fish sandwiches, salads
Dinners:
Monday: Hainan chicken rice with cucumbers
Tuesday: Chinese cold noodles with chicken and sesame sauce
Wednesday: Chinese BBQ pork with rice, salad and miso soup
Thursday: Vietnamese grilled pork chops with rice and marinated daikon and carrot
Friday: Chicken chao (rice porridge) with marinated veggies
Saturday: Fried rice
Sunday: Easter Sunday (dinner with the family)
Just another Fall week at our house. Most everything on the menu at our house for the next week is from our pantry/freezer. I’m really determined to use what we’ve got on hand rather than make another trip out to the store. We’ll be in need of a good restock after this week, though…

I’d really love to try going more meat-free this week but since I’m on a clean out the fridge kick, won’t be happening this week…
Panfried tofu with peanut sauce noodles
Peanut butter toast with milk

Salad with peanut sauce chicken

This is a week of changes! My sister will be out of the house for much of the week while she starts training for a new job and The Little Empress will be starting school, necessitating the need for quick, easy to make and eat breakfasts as well as packing her lunch. I didn’t expect to have to start packing lunches for at least another three years! Oh well, you just gotta roll with the schedule, I guess.
To further complicate matters, a few unexpected expenses make for a very tough financial week. There’s less money than usual for the food budget so I’m having to really get creative with what we’ve got left in the pantry and freezer… which isn’t much. Luckily, there’s still something to work with so hopefully our food for this week won’t suck much.
On the menu at our house for the next week…
Breakfast
Monday through Wednesday — Breakfast burritos (gonna make a batch of breakfast potatoes and scrambled eggs on Monday to last for a few days)
Thursday & Friday — Banana + strawberry smoothies with a boiled egg and whole grain toast
Saturday & Sunday — Pancakes using some of the Amish Friendship Bread starter batter
Lunch
Lunch for Daddy will be leftovers from the night before.
Mommy & The Little Empress will be (separately) dining on:
